Ingredients
- 3 large tablespoon Greek or low fat yogurt
- 3 large tablespoon Baobab jam
- 40g mixed fresh berries (raspberries strawberries, blueberries etc…)
- 80g homemade Baobab granola
To make the Baobab granola, you will need:
- 1kg oats
- 250g wheatgerm
- 500g oat bran
- 250g puffed brown rice
- 100g sunflower seeds
- 100g linseeds
- 100g sesame seeds
- 1 cup flaxseed oil
- 1 cup black strap molasses
- 100g raisins or goji berries
- 6 tablespoons baobab powder
- 200g chopped nuts
Method
- Measure oil then molasses into bowl. Put in oven briefly to make runny above the tray of dry ingredients. Mix liquid ingredients and pour over the two types of oats, puffed rice and wheatgerm and roast at 200C until brown. Add the remaining ingredients at the end and mix together.
- Start by placing a tablespoon of yogurt at the bottom of a glass – keep layering the other ingredients in the preferred order i.e. granola, then jam, then yoghurt and so on keeping the berries for last to be placed at the top.
